Caramel

Not sure where this one came from, but it's a great one!

Mix together:
1  1/2 c. sugar
1  1/2 c. corn syrup
Cook on medium heat until “spins a thread” Don’t burn!  Keep stirring.

While boiling add:
1 cube butter, cut in pieces (wait til melts) then add
1 can evaporated milk, a little bit at a time.



Cook, stirring constantly at simmering temp, keeping it bubbling. Cook until it reaches the “soft ball stage”.  Add 1 Tb. Vanilla. Test by dropping some in cold water.  It should be the consistency you want.  Takes about 20 minutes.  If you cut the recipe in half, it only takes about 5 minutes.  Use for  apple dipping or as caramel candy or pour on popcorn. Also makes a great ice cream topping when thinned with a little milk.
