Applets (Apple Candy)


(This tastes sooo close to the Applets by Liberty Orchard.  One of my favorite candies)
 2 pkg. unflavored gelatin
1-1/4 C. applesauce
1  1/2 C. sugar
1/2 C. chopped walnuts (optional, but to me that is the "flavor" and crunch that I love)
1-1/2 tsp   vanilla
3-5 drops Lime, Orange or Tangerine essential oil
Preparation:
Mix gelatin with 1/2 cup  applesauce and let stand for 10 minutes.
Put sugar and remaining applesauce in a saucepan. Bring to a boil.
Stir in gelatin-applesauce mixture and cook over low heat for 15 minutes, stirring frequently.
Add walnuts, oil and vanilla; mix well.
Pour into greased 8 inch x 8 inch pan.
Let stand overnight.
Cut into squares and dip in powdered sugar.  (The squares will be sticky and the sugar will stick nicely to them)
  For "Cotlets" use apricot puree.  For "Peachlets" use peach puree.  The possibilities are endless. Pear, Lime, Pineapple, Cranberry, etc.
